Difference in Cuts
Filet mignon, or dainty strip in French, is a very tender cut of meat famous for its melt-in-your-mouth texture. It comes from the tenderloin, a muscle that doesn’t get used much, so it remains soft and has very little fat. Even though it has a bit of marbling, it is one of the leanest cuts of beef you can buy.
The ribeye, on the other hand, is sought after for its flavor. Also very tender, it comes from the meat in the ribcage, in the same area where the prime rib roast is cut from. The ribeye has a good amount of marbling throughout, giving the meat a bold, beefy taste you can’t get from any other cut.
As you probably know, the ribeye and filet mignon are two higher-end steaks. Even so, the filet will always be the more expensive of the two since there is a smaller amount of this cut available compared to a ribeye. If price is a factor when choosing a cut, go with the ribeye. While not the cheapest cut of beef out there, it has an outstanding flavor that is well worth the price tag.
The Best Ways to Prepare Them
These cuts have different flavor profiles, so the way you prepare them isn’t going to be the same. Filet mignon cooks quickly and doesn’t have much fat, so you want to be careful with the heat to not dry it out. You can grill it over medium heat or give it a good sear with olive oil and seasoning in a pan.
The ribeye has more fat and is larger in size, so you can cook this steak pretty quickly over high heat. Since it has such a strong flavor on its own, it doesn’t require much when it comes to seasonings. Toss it on the grill for a few minutes, or cook it in a cast-iron pan with some butter to get a delicious crust on your steak.
